The day is chilly with a hint of rain lingering in the air…perfect weather for a wholesome cauliflower soup!
The recipe is very simple. I just fried one potato (cut into small pieces), one big onion, garlic and cauliflower florets (one whole head) in a pan with a little bit of olive oil- after everything was tender, i blended them well, added hot water to dilute the mix (and salt) and again boiled it for a while. I served the thick soup (you can add more water to dilute it but don’t forget to give it a nice boil) with some cilantro/coriander and freshly ground pepper. Bon Apetit!
