Bhaja (fry) of the day! Urad daal stuffed pumpkin leaf fritters (doused in a liquid-y mixture of rice flour, black cumin seeds and some spices)
The recipe that I followed was:
Soak Urad Dal in water overnight and ground to a paste with some ginger and green chillies. Mix chopped coriander leaves, zeera powder, Kashmiri Lal Mirch, salt to the paste. Blanch slightly the pumpkin leaves – but i did not need to since the leaves i got were quite soft already. Put in some filling in the leaves and fold them like a pan. Then fry them after dousing them in a mixture of water, rice flour, black cumin seeds and whatever masala u want to put in! Done! Would be crispy from the outside and tender from the inside.
