My ma baba were not eating much at all…both of them had developed a common “oruchi” between themselves and were getting irritated by the mere sight of food… so thought of making something different (had to be street food to get the ‘ruchi’ back) which they had not tasted for some time but loved. So decided to surprise them with a plate full of home made garma garam club Kachoris …i know they are unhealthy and not good for them but given the option of no-food-only meds and unhealthy-but-home-made-food-plus-meds..the latter appealed to me more and the best reward for me was..my ma and baba ate up a whole plate filled with these tiny wonders…soo happy!!
I mixed a few recipes I found online and a lil judgement (of my own) to match my taste and made these – i never measure quantities- am an instinctive cook (if i can call myself that)- just tried to make sure that the aloo rasa looked as much as the one Sharma sweets serve and kachoris were small..bite sized and slightly crispy on the outside (but ‘phulko’).
Kachori Dough:
Urad dal (soaked the night b4 and grinded into a smooth paste with a lil ginger and one green chilly)- about 1 cup or slightly more
Maida – Around 2.5 cups
Suji- 1/3rd cup approx
Yogurt- around half cup
A pinch of Hing, salt, red chilly powder and a little oil
(I did not add any water)
Aloo Rasa:
Boiled potatoes in the pressure cooker. In a non stick pan, in around 3-4 tsp oil(i used olive oil), put in paanchphoron, then some besan and fry till you get the cooked besan smell..add turmeric, coriander powder, zeera powder, kashmiri red chilly powder and hing. After a minute, add water and boil. Add in the boiled potatoes ( break them with ur hands) and add aamchur powder. Add salt. Boil. Then add some fresh garam masala paste (around 2-3 green cardamom, a tiny cinnamon piece, black pepper whole, a couple of cloves)..cook. You can add some kasuri methi here but i had run out of them so just added chopped coriander (fresh!) Leaves and viola..the potato rasa is made!!
